The story of the Fragment Restaurant in Cluj-Napoca is a chronicle of culinary evolution and innovation, beautifully developed in two distinct chapters.

Chapter 1: The Beginnings of the Fragment Restaurant

Located in the vibrant heart of Cluj, at Cluj Arena, Fragment Restaurant originally appeared under the guidance of Chef Andrei Chelaru. His valuable experience, gained at the prestigious Noma, played an essential role in defining the direction of the restaurant. Quickly recognized for its exceptional quality, Fragment was included in the renowned Gault&Millau Romania 2019 guide.

The modern and avant-garde design of the restaurant creates a unique atmosphere, combining contemporary architectural elements with warm and welcoming details.

 

Andrei Chelaru's menu was a tribute to tradition, reinterpreting authentic flavors in a contemporary style. It featured fresh and local ingredients, including products from Colina Farms and dairy from the Trascău Mountains. Emphasizing quality and freshness through modern cooking techniques such as slow cooking, the menu offered a memorable dining experience.

Chapter 2: The New Era of Fragment Cuisine

With the departure of Andrei Chelaru, the Fragment Restaurant welcomed a new phase, withRaku Ilie Bogdan taking the role of main chef. Known for his creativity and passion for culinary art, Bogdan is accompanied byRadu Moldovan, the new sous-chef, who brings a new creative force. Together, they continue the restaurant's tradition of excellence, introducing new interpretations and innovations to the menu.

The collaborative menu, developed by Andrei, Bogdan and Radu, aims to maintain a connection with Romanian culinary roots, while exploring new gastronomic horizons. The use of local ingredients remains central, focusing on fresh and high quality products.
